Instructions
  1. Using nonstick cooking spray, cook all of the veggies in a pan on medium heat. Cook until they're mostly soft.
  2. Add a little more cooking spray. Add the egg beaters.
  3. As the egg beaters start to cook on the bottom, use a spatula to lift them up and let the uncooked portions reach the pan and also cook. Continue doing that until almost all of the egg has been cooked.
  4. Sprinkle the cheese, paprika, salt and pepper to the top. Enjoy!

If you don't have egg beaters, you can use egg whites or eggs!
The whole frittata only has about 135 calories! 21 grams of protein!
I also sometimes add southwest spicy mustard to the top for even more kick.
